Sunday was rooster day at our household’s home in Ikeja, Lagos, and the end result was a dinner sourced virtually fully from the yard: freshly picked herbs to raise the senses, ripe citrus so as to add acid to the drippings, seasoning blends my mom made and saved in her pantry, and naturally, the rooster itself (a number of of which we saved year-round in a broad enclosure).
